On Friday 23 May, I – Mercedes Roggen, founder of WAFFEL and winner of Heel Holland Bakt 2023 – will be at the Selfmade Summit in Amsterdam. Not just to talk about croissant waffles, but to talk about something much bigger: focus, female entrepreneurship and the courage to build it yourself.

Did you know that making waffles was a real women's craft in the 17th century? "Hou je waffel" (keep your waffle) meant: pay attention, keep your waffle iron closed, don't let your batter burn. And that is exactly what is still the core of entrepreneurship today.
Because when I started my first company, I jumped from product to product. Without focus, without real grip. Now with WAFFEL, everything revolves around one thing: focus on quality. One product. One mission. And because of that? It's growing faster than ever.
